The Aboriginal peoples who passed through the Northern Tablelands would often chew on the leaves of the Strawberry Gum for their sweet berry flavour. They would also moisten the leaves and lay them over a fire to release their fragrant oils to calm stomach problems. Strawberry Gum is native only to the NSW Tablelands region, Australia's highest highland region. Also known as Forrest Berry, Strawberry Gum contains the highest quantity of methyl cinnamate of any plant, giving it a robust fruit-berry flavour. Strawberry gum is an excellent source of antioxidants that provide comprehensive protection from oxidative stress and autoimmune and cardiovascular diseases. When you use Strawberry Gum in cooking, it has this superhero ability to elevate all the other flavours you put with it, making it the perfect addition to this cookie with its smooth bursts of creamy plant-based white choc and the nutty crunch of the pepita seeds.
